Great Chicken Casseroles
Herbed Chicken Casserole
Ingredients:
8 Skinned Chicken Breast Halves OR 3 or 4 Boneless Chicken Breasts
1 Can Cream of Mushroom Soup
1 Can Cream of Chicken Soup
1 (8oz) Package Herb Seasoned Stuffing
1/2 Cup Melted Margarine
Directions:
Stew chicken breasts and allow to cool. Reserve 2 cups of broth. Remove chicken from the bone and tear into small pieces. Place chicken pieces into shallow 3 quart baking dish. Combine soups and 1 cup of broth and pour over the chicken.
Mix margarine and remaining 1 cup broth. Stir margarine and broth mixture into stuffing. Bake at 400 degrees for 30 minutes.

Chicken Casserole With Stuffing
Ingredients:
1 Cooked, De-boned, Chopped Chicken (Save Broth)
1 Stick Margarine
1 Cup Chopped Celery
1 Cup Chopped Onion
1 Can Cream of Chicken Soup
1 Can Cream of Celery
1 Package Pepperidge Farm Stuffing Mix
Directions:
Melt one stick of margarine and saute 1 Cup chopped celery and 1 Cup chopped onion. Add stuffing. In baking dish, layer stuffing and cooked chicken. Combine soups and dilute with 1 can of chicken broth. Pour over stuffing and chicken. Repeat layers as desired.
Bake at 350 degrees for 45 minutes.
Chicken - Broccoli Casserole
Ingredients:
3 Chicken Breasts
2 Cans Cream of Chicken Soup
1 Cup Mayonnaise
1/2 Teaspoon Curry Powder
1 Teaspoon Lemon Juice
2 Packages Frozen Chopped Broccoli
Bread Crumbs
Shredded Cheddar Cheese, Approximately 1 Cup
Directions:
Steam chicken until tender. Cut chicken into chunks. Cook broccoli until ALMOST done. Butter casserole dish. Place one layer of chicken chunks in bottom of dish. Add a layer of broccoli. Add a layer of bread crumbs, enough to cover the top of broccoli and chicken. Mix together soups, mayonnaise, curry powder, lemon juice, and shredded cheddar cheese. Pour mixture over top of bread crumbs.
Bake at 350 degrees for 25 to 30 minutes.
Chicken Crunch Casserole
Ingredients:
3 Cups Chicken, Cooked and Diced
2 Hard Boiled Eggs, Chopped
1 Small Can Sliced Mushrooms
3/4 Cup Celery, Diced
1/2 Cup Slivered Almonds
1 Tablespoon Chopped Onion
1 Can Cream of Chicken Soup
3/4 Cup Mayonnaise
1 Cup Chow Mien Noodles
Directions:
Mix first six ingredients. Combine soup and mayonnaise. Toss soup and mayonnaise mixture with chicken mixture. Place into an 8 X 8 casserole dish. Top with noodles.
Bake at 350 degrees for 30 minutes.
